Lamb or Beef Gyro

The lamb or beef gyro is best served with naan or pita bread and tzatziki sauce.

Ingredients

  • 1lb ground lamb or beef

  • 1 small onion, grated

  • 1 Tbsp minced garlic

  • 1 Tbsp cumin

  • 1 Tbsp curry powder (optional)

  • 1 Tbsp ground coriander

  • 1 Tbsp paprika

  • 1 tsp red pepper flakes

  • 2 tsp salt

  • ¼ tsp black pepper

  • ½ tsp baking soda

  • 3 Tbsp chopped fresh parsley or cilantro

  • 2 tsp olive oil

Directions

  1. In a medium bowl, grate the onion with a box grater.

  2. Measure in all of the spices and baking soda.

  3. Add in the ground beef or lamb, and use your hands to fully incorporate spices into the meat and onion mixture. You may at this stage cover and chill the mixture to meld the flavors until you are ready to bake, or go straight to baking.

  4. Preheat oven to 475 degrees F and line a large baking tray (with edges) with parchment paper.

  5. Spread the meat mixture as thinly as possible to the edges of the tray. You can use your hands to do this, or cover the mix with another piece of parchment paper and roll it out with a rolling pin.

  6. Using a bench scraper, metal spatula, or knife, score the meat, making 1-inch strips, cutting to the parchment, across the length of the pan. Then score lightly in a diagonal across the strips to promote even cooking.

  7. Brush the meat with olive oil to prevent drying out.

  8. Bake for 15-18 minutes . If the meat produces a lot of liquid, drain it off into a bowl and return it to the oven for a few more minutes to crisp up slightly.

  9. Remove and serve on a naan, pita, or tortillas with tzatziki sauce and desired fresh vegetables.
